Have you ever bought fruits that’s not in season because you just wish it was that season again lol. Decided to buy some green mango a week ago but always forget to eat it. Now that it’s almost ripe, I am sad that I didn’t get to enjoy when it was nice and green and sour. But my mom decided to make a side salad to eat with our catfish dish. Here’s a very quick recipe for Vietnamese Green Mango Salads with Prawns

-2 green mango, julienned
-12 to 15 shrimps (21/25 ct)
-1 tsp of fish sauce
-1 tsp of sugar
-2 or 3 cloves of garlic, minced

On medium high heat, add some oil in a pan or pot. Add the minced garlic for a minute to release the aroma. Add the shrimps. Half way through add the fish sauce and sugar and cook till shrimps are fully pink and cooked.

Mixed the shrimps mixture and the green mango. You can add some chopped peanuts and fresh mints. Enjoy!
